Incentives to attract workers

Q: I have a fast-growing catering business and am hiring my fourth and fifth employees. During interviews for these positions, a couple of candidates asked about stock options. How would I set this up? What is a fair amount to give someone? Is there a good book that describes how to set up a stock option program?
