University of Montana setting the pace for growing, consumption, of local foods

We hear a lot about the trend to locally-grown foods. On the University of Montana campus they’re taking that trend further, even growing foods right on campus.

When UM students hit the salad bar, a "growing" amount of their veggies are coming from right next door. Literally. If you look above the counter you’ll see verdant trays of "micro-greens", sprouts and the like that come to life just a few feet away.

It’s just one feature of an on campus "hyperlocal" food campaign that started 5-years ago.
