Panera Baking Data-Driven Delicacies

Will the turkey chili that Panera Bread introduced this winter make its way back on the menu next year? Only if the analytics point to yes, says Mike Bufano, vice president of planning at the St. Louis-based bakery-café giant.

Panera Bread comprises 1,800 bakery cafés across the US; 50% are company-owned and 50% franchisee-owned. Generating more than $4 billion in revenue annually, Panera relies on analytics to fine-tune its menu, operations, locations, marketing, and more.

"We know everything sold in every one of our company stores," says Bufano, adding decision makers receive a snapshot of sales and operations on a daily basis. Weekly, they receive a detailed analysis of what is driving the average $50,000 in sales for each company store.
