Aspiring entrepreneurs seek Food Tech Center help

The University of Idaho Food Technology Center http://www.cals.uidaho.edu/ftc/ seeks a U.S. Department of Agriculture certification to process pre-cut meat and poultry products. The move comes as the Caldwell facility works with more recently unemployed or underemployed people who aim to launch food businesses, Manager Drew Dalgetty said.

“We’re working with just about everything else,” he said, referring to food product ingredients.

Approval to process pre-cut meat – U of I Food Tech would not be a slaughter facility – would give the facility another tool with which to serve rising demand. The products would require USDA certification and inspection, he said.

U of I Food Tech Center draws diverse ventures

Paul Yamamoto for about six years has had the University of Idaho Food Technology Center package his Chiliwongo spicy ketchup – which comes in 5- and 16-ounce bottles – and 12-ounce bottles of hot mustard.

“We’re not a high-volume producer for this ketchup, and he (Food Tech Center Manager Drew Dalgetty) will do 40 to 50 cases at a time,” he said. “I’d rather have Drew do it unless we get real big.”
